Amarone is probably the best known wine made from dried grapes. The grapes are spread out on straw mats until the end of February or March by which time they have lost about 35%-40% of their weight. The result is a very concentrated wine high in alcohol which can be kept for a long time. Fabulous on its own or with cheese.
